The wine cellar is the heart of the winery. The cellar courtyard forms a winding system of corridors with many tanks and barrels. Great importance is attached to the gentle treatment of the Ciders, they are clarified and mixed with yeasts and cooled during fermentation so that as many bouquet substances as possible are preserved. The white wines are stored in stainless steel tanks and the red wines in traditional wooden barrels. The vintage is bottled in March using a fully automatic bottling line. The older part of the cellar is at least 200 years old. The vinotheque is also located in this part. We obtain the barrique barrels from the Benninger cooperage. Our Zweigelt Barrique (barrique from Zweigelt & Shiraz) is currently maturing in the barrels.
