Christmas stollen

After countless taste tests, we have found the perfect stollen recipe!

Ingredients:

  • 1000 g flour
  • 350 g water
  • 80 g yeast
  • 20 g sugar
  • 2 eggs
  • 400 g butter
  • 170 g nuts
  • 170 g raisins
  • 300 g candied pumpkin
  • Candied orange peel

Preparation:

Prepare a pre-dough using the flour, water, sugar and yeast, and keep it warm (for 1/2 an hour).

Add the butter and eggs and knead into a dough. Just before mixing, add the fruits. These should have been soaked the day before. Divide the dough into equal pieces. Leave the pieces to rest, shape them, place them in the preheated oven (180°C, gas mark 4), and bake for about 50 minutes. After baking, brush with butter and dust with sugar.
